Soupe aux boulettes de viande

Ingredients

  • 4 champignons parfumés
  • 350 g de boeuf haché maigre
  • 1 oignons coupé en fins morceaux
  • 15 ml (1 cuillèrée à soupe) de fécule de maïs ou de manioc
  • 1 oeuf
  • 75 ml d'eau
  • 15 ml (1 cuillèrée à soupe) de sauce soja
  • sel en quantité suffisante
  • 1 litre de bouillon de poulet
  • 500 g d'épinard ou de cresson, ou de chou chinois, ou de poireaux
  • ciboule au goût

Preparation

  • Tremper les champignons dans l'eau chaude, laisser ramollir 30 minutes.
  • Couper les en morceaux.
  • Ajouter les champignons à la viande hachée, puis les oignons, la fécule de maïs, l'oeuf, l'eau, l'huile, la sauce soja et le sel. Mélanger le tout et façonner de petites boulettes.
  • Porter le bouillon de poulet à ébullition, incorporer les épinards ou les autres légumes. Porter à ébullition et ajouter les boulettes de viande.
  • Laisser mijoter cinq minutes.
  • Ajouter de la ciboule et servir.
