Soupe aux concombres

Ingredients

  • 1 litre de bouillon de poulet
  • 2 tranches de gingembre
  • 4 champignons parfumés préalablement trempés dans l'eau, tranchés en lamelles
  • 30 ml (2 cuillèrée à soupe) de sauce soja claire
  • 4 concombres, pelés et coupés en morceaux
  • 100 g de chair de crabe ou crevettes ou de lamelles de jambon
  • sel et poivre
  • feuilles de coriandre au goût

Preparation

  • Amener le bouillon de poulet à ébullition.
  • Ajouter les morceaux de gingembre, les champignons, la sauce soja, les morceaux de concombre, puis laisser mijoter 20 minutes à feu doux.
  • Ajouter la chair de crabe ou les crevettes, ou les lamelles de jambon et laisser de nouveau mijoter 5 minutes. Saler et poivrer.
  • Ajouter les feuilles de coriandre et servir.
